What is burrata?
Burrata is a creamy and indulgent Italian cheese that has recently become popular. It is made from mozzarella and cream, giving it a rich and velvety texture with a delicate flavour.
Burrata is made by stretching fresh mozzarella into a pouch-like shape and filling it with a mixture of cream and more shredded mozzarella scraps. Creating a delicious contrast between the soft outer shell and the oozy centre.

Salad ingredients:
- Fresh tomatoes - heirloom tomatoes are perfect for this salad. Depending on availability and seasonality we love to use a variety of tomatoes for this recipe, beef and cherry tomatoes work well too.
- Burrata - an Italian cheese now available in most supermarkets. Substitute with mozzarella.
- Fresh basil
- Salt and pepper
Burrata caprese dressing:
- Extra virgin olive oil
- Red wine vinegar

How to make a burrata caprese salad
This salad really is so quick and simple to make:
- Prepare your tomatoes, slice or quarter large tomatoes and half small ones.
- Mix the vinegar and olive oil to make the dressing. Pick and wash the fresh basil.
- Arrange the tomatoes on a serving dish. Plate them in a circle leaving space in the middle for the burrata. Season the tomatoes with salt and pepper.
- Place the burrata in the centre of the plate and drizzle the dressing over the tomatoes.
- Before serving arrange the basil around the dish and enjoy!
Hint: Don't slice the tomatoes too thin or uniform, keep them chunky and rustic.
Chef tips
- To serve this dish, we love to plate the burrata whole. Burrata can be a little messy to slice as the creamy filling oozes out, so we recommend just breaking it up in the middle of the dish and letting everyone tuck in.
- To prepare ahead, plate the tomatoes and burrata as per the instructions, and keep covered in the fridge. Prepare and store the dressing and basil separately in the fridge as well. Once you are ready to serve simply add the dressing and top with the basil.

Burrata Caprese Salad
Ingredients
- 3 tablespoon Extra virgin olive oil
- 1 tablespoon Red wine vinegar
- 300 g Fresh tomatoes See note 1
- 1 Burrata
- Small handful of Fresh basil
- Salt and black pepper Season to taste
Instructions
- To make the dressing: Mix the red wine vinegar and extra virgin olive oil.3 tablespoon Extra virgin olive oil, 1 tablespoon Red wine vinegar
- Slice the tomatoes. Large tomatoes can be cut into slices and small/ cherry tomatoes can be cut into half.300 g Fresh tomatoes
- Arrange tomatoes onto a serving platter leaving a space in the middle for the burrata and season to taste with salt and pepper.
- Place the burrata in the centre, drizzle the dressing over the tomatoes.
- Arrange the pick and washed fresh basil around the dish.
- Serve and enjoy.
