We use puff pastry as the base and a simple apricot mixture for the filling. This recipe is designed for moments when you need a quick sweet treat. Ingredients and substitutions
Simple staple ingredients make this easy, sweet pastry recipe quick to whip up.
- Puff pastry sheet or block - store-bought or homemade, we used a frozen puff pastry sheet. Allow the pastry to thaw before preparing.
- Egg - to create an egg wash.
- Apricot - fresh or canned use what is seasonally available to you. Substitute with peaches.
- Soft brown sugar - substitute with granulated sugar.
- Cornflour or cornstarch (depending on where you are from)
- Ground cinnamon.
- Cream - heavy or single, we have also used milk when we haven't had any cream available.
- A little extra granulated sugar for dusting - optional

Step by step instructions
Create this delicious apricot galette in 4 simple steps:
1. Prepare the apricot filling.
- For canned apricots drain and half them, for fresh remove stones and half or quarter depending on size.
- Mix the apricots with the brown sugar, cinnamon and cornflour. Set aside until required.
2. Prepare the galette puff pastry base.
- Preheat the oven 180 °C (356 °F).
- If using a pastry sheet, let it thaw out first. For pastry blocks roll out on a lightly dusted surface.
- Then cut your pastry into a circle approximately 22cm/ 8 ½ inches in diameter. Place on a baking tray with greased baking paper.
- Brush the egg wash over the pastry and then use a fork to dock holes all over the pastry, including around the edges.
3. Assemble the apricot galette.
- Place the prepared apricot filling in a circle in the middle of the pastry, leaving a gap around the edge.
- Gently bring up the pastry edge, folding and crimping a little as you go.
- Brush the exposed pastry brush with the cream and dust with a little granulated sugar (if using).
4. Bake
- Place in the preheated oven and bake for 25 minutes or until golden and crisp. Remove and allow to cool a little.
- Enjoy warm or at room temperature and serve alongside ice cream or whipped cream for a deliciously easy treat.
Chef tips
- Handling the puff pastry: Allow frozen pastry to fully thaw out before preparing or it will be hard to shape. Take care when handling the puff pastry, as you want it to remain cool while you are working with it. Pop it in the fridge to cool before shaping if needed, and work quickly to shape the galette to avoid overworking the pastry with warm hands.
- Choosing Apricots: If using fresh apricot select ripe fruit with flesh that is soft when squeezed.
- Perfectly imperfect: Don't worry about creating something 'perfect' this recipe is for the home cooks, it's hard to go wrong and will taste delicious anyway you shape it.
Variations
- Alternative Fruits: Try swapping the apricots with other stone fruits like peaches, plums, or cherries.
- Additional toppings: For extra flavour, add a drizzle of honey or even some thyme. Add another layer of texture by sprinkling some chopped nuts over the top, like almonds or pistachios.
- Size and shape: Create individual galettes by cutting out small pastry circles and dividing the filling between them. Or try a different shape and cut out some rectangle pastry bases, then simply fold the edges, crimp and pinch at the corners.

Making ahead instructions and storage
Make ahead - Though it is best served fresh from the oven, this apricot galette recipe can be made a few hours ahead and served at room temperature or reheated to warm.

Easy apricot galette with puff pastry
Ingredients
- 1 Puff pastry sheet or block We used a frozen puff pastry sheet, thawed out, that measured 24x23 cm or 91/2 - 9 inches. See note 1.
- 1 Egg Beaten for an egg wash
- 8 Apricots Canned, drained or fresh, stones removed and cut in half.
- 2 tablespoons Soft brown sugar You can also use granulated sugar
- 1 teaspoon Ground cinnamon
- 1 tablespoon Cornstarch / cornflour
- 2 tablespoons Cream - heavy or single
- 1 teaspoon Granulated sugar optional to dust over the crust
Instructions
- Preheat oven to 180 °C (356 °F)
For the apricot filling.
- Mix the prepared apricots with the cornflour, cinnamon and brown sugar, stir well and set aside while you prepare the pastry.
Prepare the puff pastry.
- If using frozen pastry, allow it to thaw out. If using a block of pastry, roll out to approximately 24x23 cm or 91/2 - 9 inches.
- Cut the pastry into a circle, approximately 22cm/8 ½ inch in diameter - we used a small plate to cut around.
- Place the prepared pastry on greased baking paper and place onto a baking tray.
- Brush the beaten egg over the pastry then use a fork to dock holes all over the pastry.
Assemble the apricot galette
- Place the apricot filling in a circle on the pastry leaving a gap around the edge.
- Gently bring up the pastry edge, folding and crimping a little as you go.
- Lightly brush the exposed pastry crust with the cream and then dust over with the granulated sugar (if using).
To bake
- Place into the preheated oven and bake for 25 minutes or until golden. Remove the galette from the oven and allow to cool slightly before serving.
- Serve alongside ice cream or whipped cream for a simple yet delicious dessert.
