Creamy Seafood Chowder

– Fresh clams – Canola oil – Onion – Garlic – Celery – Chorizo sausage – Potatoes – Butter – Plain flour – Milk – Corn kernels – Salt and pepper

Ingredients:

STEP 1 - Purge clams overnight in fresh water.

STEP 2 - Steam clams in water until open. Remove and strain liquid.

STEP 3 - Remove meat from some clams and keep shells for garnish.

STEP 4 -  Sauté onion, garlic, celery, and chorizo in oil. Add potatoes and cook until softened.

STEP 5 - Add butter, flour, clam liquid, and milk, stirring until thickened. Add corn and clam meat. Season and serve with clams in shells.

Garnish with fresh parsley and serve warm crusty bread.
