– Oil – Venison osso buco – Salt and black pepper – Shallots – Garlic – Carrot – Celery – Anchovy fillets – Bay leaf – Rosemary – Thyme – Red wine – Beef stock – Cherry tomatoes – Kalamata olives – Gremolata (optional) – Parsley – Lemon zest

Ingredients:

STEP 1 - Season venison osso buco with salt and pepper, drizzle with oil, and sear in a hot pan until sealed on all sides.

STEP 2 - Brown shallot, garlic, carrots, and celery in a hot oven-proof dish or Dutch oven.

STEP 3 - Add chopped anchovies, bay leaf, rosemary, and thyme, then stir in red wine to deglaze and reduce by half.

STEP 4 - After reducing red wine by half, add cherry tomatoes and beef stock.

Hot dish

STEP 4 - Return venison and juices to the dish, add olives, and simmer until submerged. Cover and bake at 150℃/300℉.

For best results, we would allow 8-10 hours for this slow cooking method.
