Easy Homemade Pesto

A healthy and delicious homemade pesto, serve with pasta, over salad or with fish this recipe is so versatile.

– Rocket (arugula) – Garlic – Olive oil – Almonds – Parmesan cheese – Salt


STEP 1 Preheat the oven to 180°C (356 °F).


STEP 2:  Place the almonds on an oven tray and roast for 12 minutes. Remove and allow to cool.

STEP 3  Place the rocket, garlic, almonds, grated parmesan and oil into a mini blender and blend to your desired consistency.

STEP 4 Taste and season with a pinch of salt.

Store in an air tight container, in the fridge.  Freeze in single serve portions, for pesto/ dressing on the go.
