Easy Seafood Laksa

Packed with delicious Thai flavours and perfectly cooked seafood this easy, comforting dinner is sure to be a new favourite.

- Mussels and clams - Noodles - Laksa paste - Coconut milk - Eggplant & zucchini - Cooking oil - Garnish


Scrub mussels with steel wool, pull beard, discard broken shells. Purge clams in cold fresh water overnight or as directed by fishmonger.

Prepare the seafood:

Step 1: Heat a pan over medium heat and cook the eggplant until golden and soft. Set aside. Prepare the noodles according to package directions.

Prepare the laksa:

Step 2: Add half the cooking oil and laksa paste to the pan and cook for a few minutes, until fragrant. Add the coconut milk and mix well.

Hot dish

STEP 3: Add the seafood, zucchini, and eggplant to the pan and simmer for 3-5 minutes, or until the mussels and clams have opened.

STEP 4 - Drain the noodles and add them to serving bowls.

Top with the seafood and sauce, and garnish with your favorite toppings.
