Goat Curry – Diced goat meat – Canola oil – Black cardamom pods – Cinnamon stick – Star anise – Black mustard  – Curry  – Fennel  – Coriander  – Cumin  – Fenugreek  – Garlic cloves – Ginger – Onion

Coriander Yoghurt – Coriander – Mint leaves – Yoghurt – Lemon Juice – Garlic – Salt


STEP 1: Create a flavour base. Heat oil in a large pan over medium heat. Add whole spices and cook until mustard seeds pop. 

How to make goat curry?

STEP 2: Add garlic and ginger paste and cook for a few minutes. Add onion and salt and cook until light golden, about 10 minutes.

STEP 3: Add dried spices, tomato puree, and goat meat, cooking until the meat is coated in spices and the moisture has evaporated.

STEP 4: Add yogurt and water to cover meat, bring to a simmer, and slow cook for 3-4 hours or until tender.

Reduce the sauce to a gravy consistency then season to taste. Serve with rice, fresh homemade roti and enjoy!
