- Mackerel - Potatoes - Onion - Capsicum - Chilli - Parsley - Salt and pepper - Egg - Oil - Flour - Milk - Panko breadcrumbs

Ingredients:

Prepare the potatoes. Cut potatoes into chunks, boil in water until soft.

Step 1

Cook the red onion and capsicum.

Step 2

Break up mackerel fillet, add chopped parsley, chilli, spring onions, egg yolk, cooked potatoes, salt, and pepper, and mix.

Step 3

Form potato mixture into 4 round, 2cm thick patties, dredge in flour, egg, then breadcrumbs.

Step 4

Pan fry fish cakes in hot oil until golden brown on both sides.

Step 5

Serve with your favourite sauce or side dish and enjoy.
