Made from scratch Chicken Curry

A simple, yet aromatic and flavorful curry made with a delicious fusion of Fiji Indian spices.  Serve with homemade roti for a feast everyone will enjoy.

- Boneless chicken thighs - Seasoning and spices - Water - Cilantro for garnish

4 simple ingredients:

STEP 1 - Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

STEP 2 -  Add the spices and cook for 1 minute more.

STEP 3 -  Add the chicken, potatoes, tomatoes, and water. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.

STEP 4 -  1. Garnish with cilantro and serve.

If you don't have Kashmiri chili powder, you can substitute another mild chili powder or leave it out altogether.

Serve the curry with rice, our delicious homemade roti or naan bread.
