Middle Eastern Venison Koftas

These fragrant Middle Eastern venison koftas are delicous and cooked to perfection.   A great ground venison family dinner.

Venison Koftas - Venison - Turmeric - Cumin - Coriander - Chili powder - Salt and Pepper Yoghurt Flatbread - Flour - Greek yoghurt - Baking powder - Coriander - Salt Pickled Onion Garnish

Ingredients:

Soak bamboo skewers in hot water, then combine venison mince with spices and form into balls. Skewer the balls and chill before grilling or baking.

Venison Kofta

Heat a griddle pan or BBQ and cook the koftas for a few minutes per side, turning regularly, until cooked.

Cook The Koftas

Combine flour, baking powder, coriander, salt, and Greek yogurt in a bowl. Knead for 1 minute. Roll out dough into thin circles and cook on a hot griddle pan for 2 minutes per side.

Prepare the bread

Peel and thinly slice the red onion, place into a bowl and add the vinegar, oil and salt, give a good mix and set aside.

Make pickled onion

Combine yogurt, cucumber, lemon juice, zest, salt, and mint in a bowl, mix well, and refrigerate.

Assemble the koftas platter with flatbreads, yogurt, koftas, pickled onion, tomatoes, radishes, and olive oil.

Time to assemble!
