– Fresh mint - picked and washed. - Cider vinegar. - Brown sugar. - Salt and pepper.

4 simple ingredients:

STEP 1 - Boil one cup of water and pour over the picked mint leaves and leave to steep, around 5 minutes.

STEP 2 -  Separately, mix together the cider vinegar and sugar, stir until dissolved.

STEP 3 -  Strain off the water from the mint leaves and squeeze out any excess water (Careful with the hot water) Chop the mint leaves until well chopped.

STEP 4 -  Add the mint leaves to the vinegar and sugar and mix well. Season with salt and  pepper and mix again.

STEP 5 -  – Store in an airtight glass jar in the fridge, until ready to serve.

Serve with a perfectly cooked lamb for a stunning Easter table.
