Panko Chicken

An easy week day dinner recipe.

Panko crusted chicken is an easy and tasty week day meal.  The texture of the crumb along with the spices, create a chicken dinner the whole family will love.

– Chicken breasts -  – Plain flour  – Panko crumbs -  – Parmesan  – An egg. For the spice mix: Smoked paprika, dried oregano, garlic powder, salt and pepper.

The ingredients:

STEP 1 - Prepare the chicken. Carefully, cut the chicken breast horizontally to create four portions of chicken. Try to create an even thickness.

STEP 2 -  Create 3 bowls. One with flour, one with a beaten egg and one with the panko, parmesan and spice mix.

STEP 3 -  Flour. Start by lightly dusting the chicken in the flour.  Shake off any excess, as you lift the chicken out of the bowl.

STEP 4 -  Dip in egg. Place the chicken into the egg and turn to fully coat the chicken.  As you lift the chicken out of the bowl allow excess egg to run off.

STEP 5 -  Crumb. Place the chicken in the panko crumb mix. On both sides, lightly press the crumbs into the chicken.

STEP 6 -  Bake Bake in a 220 °C / 428 °F preheated fan oven for 10 -15 minutes or until cooked.
