Ingredients:

Prep your ingredients while preheating your over to 180 °C / 356 °F.

Step 1:

Oven

Mix the carrots, red onion, fennel seeds, cumin seeds, garlic, olive oil and salt and pepper into a large bowl.

Step 2:

Pop the oven-proof dish into the oven and roast for 35 minutes.

Step 3:

Once ready, remove from oven.

Step 4:

Place onto your serving platter and add any additional garnishes.

Step 5:

There are a few garnishes that work really well with this dish and to create different flavours and textures. Experiment and make it your own!
